Pan-Seared Pork Chops with Butternut Squash

Ingredients
- 1.5 lbs Fresh Family Pack Thin-Sliced Boneless Pork Chops
- 1.5 lbs Butternut or Spaghetti Squash
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Steps
- Preheat oven to 400°F. Cut butternut squash into 1-inch cubes, toss with 1 tbsp olive oil, salt, and pepper. Spread on a sheet pan and roast for 20 minutes.
- Meanwhile, pat pork chops dry and season both sides with garlic powder, thyme, salt, and pepper.
- Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear pork chops 3–4 minutes per side until golden and cooked through (internal temp 145°F).
- Remove squash from oven when tender and lightly browned.
- Plate pork chops with roasted squash and serve.
