Pork Baby Back Ribs with Roasted Grapes

Ingredients

  • 1 pork baby back slab (about 2.5 lbs)
  • 1.5 cups California green grapes
  • 2 cups uncooked white rice
  • 4 cups water
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • Salt and black pepper to taste

Steps

  1. Preheat oven to 325°F.
  2. Place ribs on a foil-lined sheet pan, season with salt, pepper, and paprika.
  3. Cover tightly with foil and bake 60 minutes until tender.
  4. Meanwhile, cook rice: bring water to boil, add rice, reduce heat to low, cover, and simmer 18 minutes.
  5. Toss grapes with honey and vinegar; scatter over ribs after they've cooked 60 minutes.
  6. Return to oven uncovered for 20 minutes until grapes burst and caramelize.
  7. Serve ribs and grape glaze over rice.
