Pork Loin with Peach Glaze & Roasted Nectarines

Ingredients

• 1.5 lbs pork loin filet
• 2 medium peaches, halved
• 3 medium nectarines, halved
• 2 tbsp honey
• 1 tbsp olive oil
• 1 tsp dried thyme
• Salt and pepper to taste

Steps

1. Preheat oven to 400°F.
2. Pat pork dry and season with salt, pepper, and thyme.
3. Heat olive oil in an oven-safe skillet over medium-high heat.
4. Sear pork on all sides for 4 minutes total until golden.
5. Arrange peach and nectarine halves around pork; drizzle all with honey.
6. Transfer skillet to oven and roast for 18 minutes until pork reaches 145°F internal temperature.
7. Rest for 3 minutes, then slice and serve with roasted fruit.
