Rotisserie Chicken & Cheese Quesadillas with Yogurt Dip

Ingredients

• 1 rotisserie chicken, shredded
• 1.5 cups organic cheese, shredded
• 1 cup yogurt
• 8 flour tortillas (8-inch)
• 1 medium red onion, thinly sliced
• 2 tbsp butter
• Salt and pepper to taste

Steps

1. Shred rotisserie chicken and mix with salt and pepper.
2. In a small bowl, stir yogurt with a pinch of salt and pepper for dipping sauce.
3. Heat butter in a large skillet over medium heat.
4. Place one tortilla in the skillet, add a handful of chicken, red onion, and cheese. Top with another tortilla.
5. Cook for 2 minutes until golden, flip, and cook another 2 minutes until cheese melts.
6. Transfer to a plate and repeat with remaining tortillas and filling.
7. Cut quesadillas into triangles and serve with yogurt dip on the side.
