Slow-Cooked Sirloin Tip Steak with Root Vegetables

Ingredients
- 1.5 lbs sirloin tip steak
- 3 medium carrots, cut into 2-inch pieces
- 3 medium potatoes, cubed
- 1 medium yellow onion, quartered
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Steps
- Preheat oven to 325°F.
- Season steak generously with salt and pepper. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear steak 3-4 minutes per side until browned. Remove and set aside.
- Add carrots, potatoes, and onion to pot. Cook 3 minutes, stirring occasionally.
- Return steak to pot. Add beef broth and thyme. Bring to a simmer.
- Cover and transfer to oven. Braise for 90 minutes until steak is very tender and vegetables are cooked through.
- Serve steak with vegetables and pan juices.
