Slow-Cooker Chuck Roast with Garlic and Apples

Ingredients

  • 2 lbs Fresh Black Angus Chuck Roast
  • 3 Apples, cored and quartered
  • 4 cloves Fresh Garlic, minced
  • 2 medium carrots, cut into chunks
  • 2 medium potatoes, cubed
  • 1 cup beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Steps

  1. Pat chuck roast dry and season generously with salt and pepper.
  2. Place roast in a slow cooker. Add minced garlic, carrots, potatoes, and apple quarters around the roast.
  3. Pour beef broth over everything. Sprinkle with thyme.
  4. Cover and cook on LOW for 8 hours (or HIGH for 4–5 hours) until roast is fork-tender and vegetables are soft.
  5. Remove roast and let rest for 5 minutes, then shred or slice.
  6. Serve with vegetables and cooking liquid spooned over top.
