Slow Cooker Chuck Roast with Garlic & Cream Cheese

Ingredients

  • 3 lb fresh black angus chuck roast
  • 4 oz happy farms cream cheese
  • 6 cloves fresh garlic, minced
  • 1 cup beef broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chuck roast generously with salt, pepper, and thyme. Sear on all sides until browned (about 8 minutes total).
  3. Transfer roast to slow cooker. Add minced garlic and beef broth.
  4. Cover and cook on LOW for 8 hours (or HIGH for 5 hours) until meat is fork-tender.
  5. Remove roast and shred with two forks. Return to slow cooker.
  6. Stir in cream cheese until melted and combined.
  7. Serve with mashed potatoes, egg noodles, or crusty bread.
