Slow-Cooker Pulled Pork Tacos with Mandarin Slaw

Ingredients

  • 3 lbs Fresh Pork Baby Back Slab
  • 1 cup water or pork broth
  • 3 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 8 small flour or corn tortillas
  • 4 Mandarins, peeled and segmented
  • 2 cups shredded cabbage

Steps

  1. Place pork slab in slow cooker. Mix water, vinegar, honey, chili powder, and cumin in a bowl.
  2. Pour liquid mixture over pork. Cover and cook on LOW for 8 hours (or HIGH for 4 hours) until pork shreds easily.
  3. Remove pork and shred with two forks, discarding bones. Return shredded pork to slow cooker and stir to coat with sauce.
  4. In a small bowl, toss shredded cabbage with mandarin segments and a pinch of salt.
  5. Warm tortillas in a dry skillet or over a flame.
  6. Build tacos: tortilla, pulled pork, mandarin-cabbage slaw. Serve warm.
