Bacon and Egg Fried Rice with Broccoli

Ingredients
- 1 package Greenfield antibiotic free no sugar thick cut smoked uncured bacon
- 6 Pete & Gerry's Organic Free Range Large Eggs
- 2 cups Birds Eye Broccoli Florets, frozen
- 3 cups cooked rice (white or brown)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
Steps
- Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove and chop into bite-sized pieces.
- In the same skillet, add cooked rice and frozen broccoli. Stir-fry over medium-high heat for 3–4 minutes until broccoli is heated through.
- Push rice mixture to the sides of the skillet. Crack eggs into the center and scramble until just set, about 2 minutes.
- Add bacon back to the skillet. Drizzle with soy sauce and sesame oil. Toss everything together for 1 minute.
- Season with salt and pepper to taste. Serve hot.
