Ingredients

  • 1.5 lbs Smithfield Roasted Garlic & Herb Pork Loin Filet
  • 2 ears Kroger® Sweet Corn on the Cob
  • 2 packages Maruchan® Ramen Noodle Soup Chicken Flavor Instant Noodles Souper 6
  • 1 tbsp olive oil
  • 4 cups water
  • Salt and pepper to taste

Steps

  1. Preheat oven to 400°F. Pat pork loin dry and season lightly with salt and pepper.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear pork on all sides for 3-4 minutes until browned.
  3. Transfer skillet to oven and roast for 20-25 minutes until internal temperature reaches 145°F.
  4. Meanwhile, bring a pot of salted water to boil. Add corn and cook for 8-10 minutes until tender. Remove corn and set aside.
  5. In the same pot, bring 4 cups of water to boil. Add ramen noodles and flavor packets, cook according to package directions (typically 3-4 minutes).
  6. Let pork rest for 5 minutes, then slice. Divide ramen and broth among bowls, top with pork slices, and serve corn on the side.
