Ingredients
2 lbs Kroger Fresh Natural Pork Shoulder Butt Bone In
4 slices Jimmy Dean Premium Bacon Applewood Smoked, chopped
1 cup Minute Instant White Rice
1 bag Birds Eye Steamfresh Mixed Vegetables
1 medium yellow onion, diced
2 cups beef or chicken broth
Salt and pepper to taste
Steps
Cook bacon in a skillet over medium heat until crispy; remove and chop. Reserve 1 tbsp bacon fat.
Sear pork shoulder in bacon fat for 2 minutes per side to brown.
Place pork in slow cooker with diced onion, broth, and chopped bacon.
Cover and cook on low for 8 hours (or high for 4 hours) until pork shreds easily.
Shred pork with two forks; discard bone.
Cook rice according to package directions. Steam frozen vegetables separately.
Divide rice among bowls, top with pulled pork and vegetables, and drizzle with cooking liquid.
