Slow Cooker Pulled Pork with Purple Rice and Broccoli

Ingredients
- 4 lbs pork shoulder butt (bone-in)
- 1 box Ralston Family Farms Purple Rice
- 1 box Birds Eye Broccoli Florets
- 1 cup water or low-sodium broth
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp paprika, salt, and pepper
Steps
- Rub pork shoulder with paprika, salt, and pepper on all sides.
- Place pork in slow cooker. Add water, vinegar, and brown sugar.
- Cover and cook on low for 8 hours (or high for 5 hours) until pork is very tender and shreds easily.
- Remove pork from slow cooker, discard bone, and shred meat with two forks. Return to slow cooker and stir.
- Meanwhile, cook purple rice according to package directions.
- Prepare broccoli florets according to package directions.
- Serve shredded pork over purple rice with broccoli on the side.
