Smithfield Pork Loin with Teriyaki Stir-Fry Vegetables and Purple Rice

Ingredients

  • 1 lb Smithfield Roasted Garlic & Herb Pork Loin Filet
  • 1 bag Birds Eye Teriyaki Frozen Stir Fry Veggies and Sauce
  • 1.5 cups Ralston Family Farms Purple Rice
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Steps

  1. Cook purple rice according to package directions (about 20 minutes). Set aside.
  2. Cut pork loin into thin strips (about ¼ inch thick).
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add pork strips and cook 4–5 minutes until browned. Season with salt and pepper.
  5. Add frozen teriyaki veggie mix (with sauce) directly to skillet. Stir well.
  6. Cook 5–6 minutes, stirring occasionally, until vegetables are tender and sauce coats the pork.
  7. Serve pork and vegetables over cooked purple rice.
