Ingredients

  • 1 Smithfield Applewood Smoked Bacon Dry Rubbed Pork Loin Filet
  • 2 cans Veg-All Original Mixed Vegetables, drained
  • 4 slices Nature's Own Honey Wheat Bread
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Steps

  1. Preheat oven to 400°F.
  2. Place pork loin on a sheet pan, rub with 1 tbsp olive oil, paprika, salt, and pepper.
  3. Roast for 25–30 minutes until internal temperature reaches 145°F.
  4. In a skillet over medium heat, warm remaining olive oil and heat both cans of Veg-All for 5 minutes, stirring occasionally.
  5. Toast bread slices in a toaster or under the broiler until golden.
  6. Let pork rest for 5 minutes, then slice and serve with warm vegetables and toasted bread on the side.
