Ingredients
- 8 slices Smithfield Naturally Hickory Smoked Thick Cut Bacon
- 1 package Birds Eye Broccoli Florets, Frozen
- 1 box Ralston Family Farms Whole Grain Aromatic Purple Rice
- 0.75 cup sharp cheddar cheese, shredded
- 2 tbsp butter
- Salt and pepper to taste
Steps
- Cook purple rice according to package directions.
- While rice cooks, cook bacon in a skillet over medium heat until crispy, about 10 minutes.
- Remove bacon, chop into bite-sized pieces, and set aside.
- In the same skillet, melt butter over medium heat and add frozen broccoli florets.
- Cook broccoli for 4–5 minutes, stirring occasionally, until tender-crisp.
- Divide cooked rice among bowls, top with broccoli, bacon, and shredded cheddar cheese.
- Season with salt and pepper, and serve warm.
