Beef Stew with Potatoes and Squash

Ingredients

  • 1.5 lbs beef stew meat
  • 3 medium russet potatoes, cubed
  • 1 medium yellow squash, chopped
  • 1 medium zucchini, chopped
  • 1 medium calabacita squash, chopped
  • 4 cups water or beef broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season beef with salt and pepper. Brown meat in batches, 3-4 minutes per side. Remove and set aside.
  3. Add potatoes, yellow squash, zucchini, and calabacita squash to the pot. Stir for 2 minutes.
  4. Return beef to pot. Add water or broth and oregano. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 75 minutes until beef is tender and vegetables are soft.
  6. Taste and adjust seasoning. Serve hot.
