Beef Taco Skillet with Potatoes

Ingredients

  • 1.5 lbs beef fine cubes for tacos
  • 1.5 lbs russet potatoes, cubed small
  • 1 medium yellow onion, diced
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup water or beef broth
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced onion and cook for 2 minutes until softened.
  3. Add beef cubes and cook for 4 minutes, stirring occasionally, until browned on edges.
  4. Add cubed potatoes and taco seasoning, stir to coat. Pour in water or broth.
  5. Bring to a simmer, cover, and cook for 15 minutes until potatoes are tender and beef is cooked through.
  6. Uncover, stir, and cook 2 more minutes to reduce liquid slightly. Taste and adjust seasoning.
