Ingredients

  • 1.5 lbs beef fine cubes for tacos
  • 1.5 lbs russet potatoes, diced small
  • 4 slices American cheese
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 cup beef broth
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Brown beef cubes for 5-6 minutes, stirring occasionally. Season with salt and pepper.
  2. Add diced potatoes, cumin, and chili powder. Stir well.
  3. Pour in beef broth and bring to a simmer.
  4. Reduce heat to medium and cook uncovered for 15-18 minutes until potatoes are tender, stirring occasionally.
  5. Tear up American cheese slices and stir into the skillet until melted.
  6. Adjust seasoning and serve hot.
