Beef Tacos with Crispy Potato Shells

Ingredients

  • 1.5 lbs beef fine cubes for tacos
  • 2 medium russet potatoes, diced small
  • 4 slices American cheese product
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 small flour tortillas
  • Salt and pepper to taste

Steps

  1. Heat 2 tbsp oil in a large skillet over medium-high heat. Add diced potatoes, salt, and pepper. Cook 8-10 minutes, stirring occasionally, until golden and crispy. Transfer to a plate.
  2. Add remaining 1 tbsp oil to the skillet. Add beef cubes, cumin, and chili powder. Cook 6-7 minutes, breaking up meat as it cooks, until browned. Drain excess fat if needed.
  3. Return potatoes to skillet and toss with beef for 1 minute.
  4. Warm tortillas in the microwave or over a flame for 30 seconds.
  5. Divide beef and potato mixture among tortillas. Top each with one slice of American cheese. Fold and serve immediately.
