Cheesy Beef Taco Skillet with Potatoes

Ingredients

  • 1.5 lbs beef fine cubes for tacos
  • 2 lbs russet potatoes, diced small
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Steps

  1. Heat 1 tbsp oil in a large skillet over medium-high heat.
  2. Add diced potatoes and cook for 12 minutes, stirring occasionally, until starting to soften. Transfer to a plate.
  3. Add remaining oil and brown beef cubes for 5 minutes, breaking apart as they cook.
  4. Return potatoes to skillet. Add cumin, chili powder, salt, and pepper.
  5. Stir well and cook for 3 minutes until flavors blend.
  6. Sprinkle mozzarella cheese over top and cook covered for 2 minutes until melted.
  7. Serve hot.
