Ingredients

  • 1.5 lbs beef fine cubes for tacos
  • 3 medium yellow squash, sliced into half-moons
  • 1.5 cups Velveeta cheese product, cubed
  • 1 medium onion, diced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced onion and cook for 2 minutes until softened.
  3. Add beef cubes and brown for 4-5 minutes, stirring occasionally. Season with cumin, chili powder, salt, and pepper.
  4. Add sliced yellow squash and cook for 6-7 minutes until squash is tender-crisp.
  5. Reduce heat to low. Add cubed Velveeta cheese and stir until melted and smooth, about 2 minutes.
  6. Taste and adjust seasoning. Serve hot in bowls or over rice.
