Oven-Roasted Pork Tenderloin with Root Vegetables

Ingredients

  • 1.5 lbs Farmer John Fresh Pork Tenderloin
  • 1 lb baby potatoes, halved
  • 2 large carrots, cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Steps

  1. Preheat oven to 425°F.
  2. Toss potatoes and carrots with 1 tbsp olive oil, salt, and pepper on a sheet pan. Roast for 15 minutes.
  3. Pat pork tenderloin dry and rub with remaining olive oil, garlic powder, thyme, salt, and pepper.
  4. Push vegetables to the sides of the pan and place pork in the center.
  5. Roast for 20–25 minutes until pork reaches an internal temperature of 145°F (use a meat thermometer).
  6. Let pork rest for 5 minutes, then slice and serve with roasted vegetables.
